Herbal Potato Carrot Salad



Ingredients

4 medium potatoes, peeled and cut into chunks
1 cup baby carrots, give or take a few
1/2 cup chopped celery
1/3 cup fresh chopped spinach leaves
1 teaspoon dried  basil
1/2 teaspoon garlic powder
1 teaspoon sea salt
1/3 cup homemade mayonnaise

Try to use organic ingredients when possible.

Procedure

Combine potatoes and carrots, place in steamer and cook until tender.  Remove from heat and cool completely.

Combine potatoes and carrots with all other ingredients and toss together.  Makes a great meal, salad or side dish.
 

For a little extra zing, add:

Two tbsp white wine vinegar
Two tbsp olive oil
One tbsp dijon mustard
Two tbsp fresh chives, chopped

Mix together thoroughly, then add to salad and toss together.
