
| Ingredients: |
| 2 small Gala
apples, cut in small chunks |
| 1 cup yellow cornmeal |
| 1 cup unbleached
white flour |
| 1/4 cup Stevia
or Xylitol |
| 1 Tbsp baking
soda |
| 1 cup
buttermilk, or 1 cup milk and 1 Tbsp vinegar or lemon juice |
| 1 1/2 tsp salt |
| 1 tsp cinnamon |
| 3 egg |
| 1 tsp vanilla
extract |
| 1 pound maple
ground sausage |
| 1/2 cup bread
crumbs |
| 1/4 cup
unbleached white flour |
| 2 cups shredded
cheese |
| Preheat oven to
350 degrees. Place sausage, bread crumbs, flour, 2 eggs and
cheese in
bowl and mix together with hands. Shape into balls and place on
cookie sheet. Bake for 12-14 minutes. While baking, Cut up
two small Gala apples into small chunks. In another bowl, wisk
together egg, buttermilk or milk and lemon juice and/or vinegar, and
vvanilla. Add apple to the liquid mixture. Add the dry
ingredients and mix until smooth. Heat 1 1/2 inches oil in
skillet on medium heat. When oil is hot using a large spoon so
that the fritters will be elongated, spoon long spoonfuls of batter
into the hot oil. Cook one minute on each side and remove to a
paper towl to drain. Serve with three meatballs in the center and
a long fritter on either side. Drench with maple syrup and
