Sun-Dried Tomato Avocado Wraps



Ingredients

2 sundried tomato wraps
1 cup cooked brown rice

2 cups shredded cheese
1 avocado
1/4 cup chopped purple onion
2 tsp fresh or dried basil
2 tsp garlic powder

Preparation

Heat broiler to 500 degrees.  On baking sheet, place one sundried tomato wrap.
Spread 1 cup of the shrededed cheese and 1/2 cup of the brown rice onto the wrap.
Spread evenly up to about 1/2 inch from edge of wrap. Place in oven and broil only
until cheese is melted. Remove from oven.  Place on a plate.  Cut open avovado,
remove seed. Scoop out flesh from 1/2 the avocado, cut into slices and place down
center of wrap. Season with 1 tsp dried or fresh basil, and 1 tsp garlic powder.
Roll up and eat.  Delicious!

Of course, you can add more seasonings if you want, and even add extra sundried
tomatoes, black olives, anything you want.  But this is the basic recipe, and it's
my favorite!
