Banana Cake

| Ingredients 1 egg
1/3 cup honey 1 teaspoon pure vanilla extract 8 tablespoons butter, softened 3/4 cup chopped pecans 1/4 cup raisins 2 large bananas, mashed 1 cup spelt flour 1 cup unbleached white flour 1 tablespoon baking powder 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon 1/4 teaspoon sea salt 16 oz. banana yogurt Use organic ingredients when possible The Center for Unhindered Living Lawton, OK 73505 ![]() Click Here to go to My Favorite Cookbooks |
Procedure Heat oven to
350
degrees Fahrenheit. Grease 8 x8 or 9x9 square metal or glass
baking
pan. Toss pecans, raisins and 1 tablespoon of the flour together
and set aside.
Mix flours, baking powder and spices together and set aside. Mash bananas in a bowl and set aside. In a large bowl, cream butter and honey together, then add beaten egg and bananas, stirring together. Then add pecan and raisin mixture and stir together. Add flour mixture and stir together well. Turn into greased
pan. Bake 50-60 minutes, or until toothpick comes out
clean.
Remove from oven and cool slightly. Cut a square and place it on
a serving plate, and top the warm cake with cold banana yogurt.
Perhaps
sprinkle some chopped pecans on top. A delicious dessert which
does
not require a sugary icing.
