Cabbage Apple Stirfry





Ingredients:

1/2 head of cabbage, shredded large
2 medium or 3 small apples, slices
1/2 cup pecans, quartered or chopped
3 tbsp butter
1 cup water
salt and pepper to taste

Add water, shredded cabbage and apples to a skillet.  Bring water to boil.  Put top on skillet, and slightly steam/stew cabbage and apples, about ten minutes.  Take lid off, allow rest of water to boil off. Just as last of water is about to evaporate, add butter, reduce heat to low, then add pecans, salt and pepper, stir until all is well mixed and butter is melted.  Serve warm.

You could also add some shredded cheese if you want.  Could use soy if you don't want to use dairy.  Then this would be a complete meal: fruit, vegetable, protein from nuts and dairy.
