
| Ingredients: |
| 2 chicken
thighs, cut into chunks |
| 1 pound dried
fettucini |
| 1 cup frozen
peas, thawed |
| 1 tsp garlic
powder |
| 2 tsp dried basil |
| 1 stick butter,
melted |
| 1/2 cup
paremesean cheese |
| 1 cup shredded
cheese |
| 2 Tbsp olive oil |
| Salt and pepper
to taste |
| Directions: Add pasta to boiling water. Let cook no longer than ten minutes. While pasta is cooking, cut chicken thighs into small chunks and saute in a skillet in the olive oil with the peas. In a small saucepan on low heat, melt the butter. Turn off heat and add the parmesean cheese, garlic and basil. Drain the pasta and pour into a large bowl. Add the chicken and pea mixture, then pour the butter and cheese mixture over the pasta and toss to coat. After plating each person's portion, sprinkle shredded cheese over the top. Salt and pepper to taste. I find this to be delicious just like it is. Some people like to add a cup of mayonnaise to make a creamier sauce, but that's up to you. I sometimes also like to peel and section an orange, cut each section into thirds and toss orange sections into the pasta at the end, before plating. Back to Cheap Meals
