Chicken Quiche




Ingredients:

3 eggs
1 large chicken thigh, chopped and sauted
1 cup milk
1 cup mayonnaise
2 cups shredded cheese
1/4 onion, small chopped
1/2 cup frozen peas, thawed
2 tsp garlic powder
1 tsp black pepper
1 small Gala apple, chopped into small chunks
     




Preheat oven to 350.  Wisk 3 eggs until smooth, add milk, mayo and one cup shredded cheese and wisk together.  Add sauteed chicken, peas, onions, apples, garlic, salt and pepper and mix thoroughly.  Pour into deep dish pie plate.  Bake at 350 for 45 minutes or until lightly golden on top.  Turn of oven, pull quiche out and sprinkle the other cup of shredded cheese on top, put back in the oven for one minute to melt the cheese.  Remove from oven and cool 15 minutes before serving. Servie iwth a small salad or whatever steamed vegetable you have on hand.  I actually prefer this quiche without the chicken, the rich cheesy flavor is delicious.  If you have some of the italian sausage meatballs left over from a previous meal,  you could use those instead of the chicken, and it is excellent.  This dish is also good with spinach or broccoli.
