The deep
purple color of the berry is due to the potent antioxidants it
contains. It has been found to reduce the oxidation of LDL
cholesterol. It reduces replication of several strains of virus
including some responsible for influenza. It helps the immune
system function better by boosting the prpoductio of cytokines,
proteins that act as messengers in the immune system. Drinking the
juice can also have a positive effect on weight, blood pressure and
emotional state. One of the best ways to consume elderberry is to make
a tea from the leaves and flowers, and lemonade from the
blossoms. Don't know why they callit lemonade when it's not made
from lemons, but it's good. Make sure to use only the ripe
berries, the unripe ones are mildly toxic. Always eat the black
or blue elderberries. The red ones are believed to be toxic, but
it's only the seeds that are toxic. If you remove the seeds, the
fruit can be eaten safely. Since most of us don't have time to
de-seed a lot of tiny berries, I suspect most of us will stick to
eating the blue or black berries.
