| 1 pound ground
Italian sausage |
| 1/2 cup seasoned
bread crumbs |
| 1/4 cup
unbleached white flour |
| 2 cups shredded
cheese |
| 1/4 onion,
chopped |
| 2 tsp garlic
powder |
| 2 tsp dried basil |
| 1/2 pound
uncooked brown rice |
| 1 stick butter,
melted |
| 1/2 cup
parmesean cheese |
| Preheat oven to
375 degrees. In a large bowl combine the ground sausage, bread
crumbs, flour, shredded cheese, chopped onion 2 tsp garlic powder and
dried basil. Mix through with your hands. Form into one
inch balls and place on cookie sheet. Bake for 12-14 minutes. Cook rice
according to package directions ahead of time. While sausage
balls are baking, melt butter in small saucepan and add paremsean
cheese and spices. Pour over rice and mix thoroughly. If
rice does not seem moist enough, add a little good extra virgin olive
oil. If you have any leftover parsley, give some a rough chop and
stir into the rice. For extra flavor, chop an apple into small
chunks and add to the butter when it is melting, then mix with rice as
butter is poured over. You can make these spicy meatballs buy getting
hot pork sausage instead of Italian, and put some chopped jalepeno
peppers, chili powder and/or cayenne in the mix instead of garlic and
basil. All depends on what spices you prefer. This should make 36
one inch meatballs, or less if you make them bigger. Back to Cheap Meals
