Mexican Tofu Stirfry or Patties

| Ingredients This basic recipe can be used as a stirfry, or modified to make patties. It is very tasty. Basic recipe: 1 pound
extra firm organic tofu, drained
1/2 onion, chopped 4 slices whole wheat bread, toasted 1 cup medium salsa 2 teaspoons powdered garlic 1/8 cup mexican seasoning 1 teaspoon powdered cayenne pepper 1/8 cup cane sugar 1/2 teaspoon sea salt Try to use organic

Procedure Put the drained tofu in a bowl and mash the tofu with a potato masher. Crumble up the whole wheat bread. Add all other ingredients and mix well, especially if you use stevia. Now, if you are going to just do a stirfry, add whatever vegetables you choose. To keep it mexican, add about 1/2 cup beans, 1/2 cup corn. Stirfry in a little olive oil, and at the end add 1 cup soy cheese. Mmmmmmm, Mmmmmmm, good! If you are going to make patties, you have to have something to stick the mix together. Boil two large potatoes, mash them and add the potato to the mixture. This can then be made into patties, and fried. Since potato is so bland, you may have to add more seasonings. Just play around with the seasonings. You
can even leave out the vegetables and
soy cheese and just stir fry the basic recipe. It is still YUMMY! |
