Pecans - Tasty and Healthful

Pecans are the healthiest nut you can find!   They are rich in protein and healthy fats.  Research from the USDA confirms that pecans are the most antioxidant-rich nut in existence.  Eating a handful of pecans each day can help lower the risk of heart disease, lower cholesterol,  and aid in weight loss.  Pecans can help reduce the risk of developing type 2 diabetes.  Eating pecans can also help delay age-related muscle and nerve degeneration.  Pecans contain ellagic acid, which is known to directly inhibit the DNA binding of certain carcinogens. They are also a rich source of Vitamin E, selenium, and B-complex vitamins.  Nuts are always best eaten raw, as this preserves the highest nutrient content.

These values can be found in the document "Oxygen Radical Absorbance Capacity of Selected Foods - 2007" USDA
