
| Ingredients: |
| 4 medium
potatoes, cut into chunks |
| 1 bell pepper,
chopped |
| 1 small can
diced tomatoes, drained |
| 2 cups shredded
cheese |
| 2 tsp garlic
powder |
| 2 tsp celery salt |
| 2 tsp black
pepper |
| Cut potatoes
into chunks. My personal preference is to steam the potatoes
before puttin the in the skillet with the other ingredients, but that's
up to you. You can also put the potatoes in the skillet with
water and stew them for twenty minutes on medium heat, then drain off
the water. Add a little olive oil to the skillet and saute the
potatoes with the bell pepper and spices. Add the tomatoes about
two minutes before ready to serve, occasionally stirring until warmed
through. Remove from heat and add shredded cheese, then spoon
