Tarragon is
part of the sunflower family. Because of it's ability to numb the
mouth, ancient Greeks chewed the leaves as a cure for toothaches.
Tarragon promotes the production of bile by the liver, helping to rid
the body of toxic waste. It is also extremely valuable in
treating intestinal worms. Tarragon is best used fresh or as an
essential oil, as the drying process destroys much of the natural
health benefits. Studies of the polyphenols in this herb show
that it helps lower blood glucose. It also helps inhibit blood
platelet aggregation and so can help prevent strokes.
