Zucchini Alfredo

| Ingredients: 3 medium organic zucchini, halved and sliced 2 cups sliced mushrooms 1 cup marsala or good red wine 1 pound of your favorite organic pasta, cooked 2 packages Simply Organic Alfredo Sauce Mix 6 tbsp organic butter, preferably raw 2 cups Milk, preferably raw 1 cup parmesean cheese 2 tsp Simply Organic Basil While pasta is cooking, put 2 tbsp butter in skillet. Lightly sautee zucchini and mushrooms until just starting to get soft. Add wine to deglaze pan. Simmer until wine is reduce by half. Drain pasta, combine zucchini and mushrooms with pasta in bowl. Follow package directions for Simply Organic Alfredo Sauce, which involves whisking 2 packages of mix into 2 cups of cold milk, add butter, bring to boil, stirring until thickened, add parmesean cheese, wisk to make sure no lumps, remove from heat, allow to stand for a minute until thickened, pour over zucchini and pasta, sprinkle in dried basil and toss.
